Cooking is a cultural and social act that gives rise to learning processes that promote participation. Opening our pots and pans is an invitation to share recipes, stories, condiments and tastes.

What kind of debt do you think the food you eat every day has?
The Cocinar Madrid team carried out research previous to the workshop to show us, through the food that we were going to cook, the different types of debt that our daily diet carries: historical debt, ecological debt and gender debt. We learned a lot of things in this workshop, from the problems behind foods such as chocolate or sugar, to curiosities about the origin of the foods that make up the basis of the Spanish diet, of which only a few are of European origin.
While we were cutting carrots and peeling potatoes, a very interesting debate was generated on all these issues, and other concepts such as food sovereignty or food mile. We talked about how and under what conditions food is produced, where it comes from, what social and ecological costs it has and what alternatives exist to improve our way of consuming it in order to reduce its impact. The workshop ended with the tasting of the cooked dishes, which we shared around the table, while we continued talking.
